According to legend, Florentines were first made in France at the Palace of Versailles for King Louis XIV. The biscuit was thought to have been created by the king’s top pastry chefs for visiting in-laws, the Medici family of Florence – whose Tuscan relative, Catherine de’ Medici had been Queen Consort of France in the 16th Century.
Today these mouth-watering biscuits are not just confined to the tables of royalty, but have become a popular international delicacy which are enjoyed all over the world. Despite the name, you’re more likely to find these delicate webs of nuts and candied fruit in a French patisserie than an Italian pasticceria. In Germany they are called Florentiner & in Italy, Fiorenti.
